Apple Bread

This apple bread is one of our favourite quick bread recipes to make for Fall especially when we have loads of apples in the house. This apple cinnamon bread is warmly spiced, moist thanks to the grated apples and apple sauce in the bread. It’s moist and tender with a soft crumb and not overly dense - you will love the texture. The bread itself is fragrant and delicious on its own - sometimes we make it plain and enjoy it with a dusting of powdered sugar or slice it and warm it up and slather it with a little butter or even apple butter , othertimes we go full throttle and add the streusel topping and caramel glaze. It is really your choice - with the streusel or without it is a wonderful Apple Bread Recipe!

Apple Bread Recipe Ingredients

  • FLOUR: Plain all purpose flour is what I use here for the batter and the crumb topping. I have not tested it with a gluten Free 1-1 all purpose flour in its place but I dint see why it cannot be used - it may change the texture of the bread slightly though
  • SPICES: Cinnamon and apple pie spice is what I use. Instead of using Apple Pie spice you can use an extra bit of ground cinnamon and add ¼ teaspoon ground or freshly grated nutmeg, ¼ teaspoon ground ginger and ⅛ teaspoon ground cloves- more or less of each to taste.
  • BAKING POWDER: For leavening - no need for baking soda in this recipe
  • SUGARS: Both brown and granulated sugar- for flavour and texture for the batter and the topping
  • APPLES: For apples with a crisp texture and sweet flavour choose Gala; Honeycrisp apples , Granny Smith, or Golden Delicious apples. I grate the apple in this recipe for flavour, texture and moisture.
  • APPLE SAUCE: (I used plain unsweetened apple sauce, not the chunky kind) adds moisture to the cake plus a little apple flavor.
  • EGGS: Eggs add structure, leavening, color, and flavour to baked goods in general this bread included
  • VANILLA EXTRACT: The perfect back note to every cake or baked good I think.
  • VEGETABLE OIL: I like to use olive oil for a more flavorful cake but I also like to use canola for a more neutral flavor but any neutral vegetable oil will work.
  • ADD INS: If you would like to add chopped walnuts or pecans to the batter you can - up to ½-1 cup chopped.
  • GLAZE: The glaze is optional but if you are making it you will need powdered sugar, caramel sauce (homemade or store-bought), and a little milk
  • STREUSEL TOPPING: The streusel topping is actually also optional too. If making you will need, flour, melted unsalted butter, brown sugar, granulated sugar and apple pie spice or cinnamon

How To Make This Easy Apple Bread Recipe

  1. Prepare bread pan and preheat oven: Grease and line pan and preheat oven at 350°F
  2. Prepare streusel topping: Whisk together dry ingredients, stir in melted butter and combine to form pea sized clumps (if using)
  3. Peel, core & grate apples: using a box grater - I grate the apples on the medium holes of a box grater. There is no need to wring out the liquid, but if your apples are super juicy, you can pat them dry with a paper towel, don’t squeeze them, just remove a little of the excess liquid.
  4. Prepare batter: Whisk together dry ingredients minus sugars, in a seperate bowl whisk together the wet ingredients with the sugars and grated apples (reserve the chopped apples) then combine the dry ingredients with the wet mixture, then fold in chopped apples - do not over mix.
  5. Assemble bread: Spoon or scoop batter into pan. Sprinkle over streusel or crumb topping
  6. Bake: Bake bread for 50-60 min then cool.
  7. Prepare Glaze: whisk all the glaze ingredients if making then drizzle over cooled bread

Tips for making the best apple bread recipe

  • Ensure ingredients are at room temperature - specifically the eggs in this recipe.
  • Combine the dry ingredients with a whisk, this acts a bit like sifting the flour
  • Cooking times can vary slightly so be sure to check the bread early. Each oven is different, and different pans conduct heat differently so cooking times will vary. It may take 15-20 minutes more. With the longer cooking time, the bread shouldn’t burn, but if you are noticing the bread getting too brown, tent with foil.
  • Bake just until a toothpick or cake tester inserted in the center comes out clean or mostly clean.
  • Avoid overmixing. Overmixing quick bread batter will result in a stodgy, dense loaf. For a pillowy, moist cake-like crumb, mix the bread batter just until combined.

How to store and freeze Apple bread

  • STORAGE: Cover and store apple bread at room temperature for 2-4 days or in the refrigerator for up to 1 week.
  • FREEZING: Apple bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap, or place in a freezer bag. Thaw the bread overnight in the refrigerator or overnight at room temperature before serving. Lightly toast individual slices for best results.

For The Streusel (optional)

  • ¼ cup unsalted butter, melted
  • ½ cup all-purpose flour
  • ¼ cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • ½ teaspoon apple pie spice or cinnamon

For The Bread

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon apple pie spice
  • ⅓ cup vegetable oil or canola oil
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup unsweetened applesauce
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups peeled grated apple, (about 2 medium apples) – see note

For the Caramel Glaze Ingredients (optional)

  • ½ cup powdered sugar
  • ¼ cup good quality, room temperature caramel sauce (homemade or storebought at room temperature)
  • 1½ tablespoons milk (or water), room temperature

Directions

  1. Preheat the oven to 350˚F and grease your 9x5 loaf pan and line with parchment paper with overhanging edges for easy removal.
  2. Make Apple Spice Streusel: In a small bowl, whisk together dry ingredients, stir in melted butter and combine to form pea sized clumps (if using) and place in the fridge while you make the apple bread.
  3. Grate apples with a box grater and set aside. (I grate the apples on the medium holes of a box grater.) You do not need to wring out apples but if your apples are super juicy, you can pat them dry with a paper towel, don’t squeeze them, just remove a little of the excess liquid.
  4. In a medium size mixing bowl whisk together the flour, baking powder, salt and spices.
  5. In a separate large mixing bowl, whisk together the eggs, sugars, vanilla, oil and apple sauce until well combined.
  6. Add apples to wet ingredients and whisk to fully combine.
  7. Then add the dry ingredients to the wet and stir with a wooden spoon or spatula until just about combined.
  8. Pour batter into pan.
  9. Take the streusel out of the fridge and break it up using a knife or fork to create uniform clumps. sprinkle it over top the batter to cover it evenly.
  10. Bake until toothpick comes out clean, about 50-60 minutes
  11. Allow to cool on cooling rack for 10-15 minutes then carefully remove the bread from the pan and place on a wire rack to cool completely.
  12. While bread is cooling prepare the caramel glaze if using by whisking together the powdered sugar with the prepared caramel sauce and the milk (or water) until creamy.
  13. Finish by drizzling some of the caramel glaze over bread - allow to set before enjoying
  14. Cover and store apple bread at room temperature for 2 days or in the refrigerator for up to 1 week.
